Apple, lime and mint granita

Fresh and zesty, this fruit-filled granita is the ultimate icy treat to enjoy as the weather warms up!

Ingredients

  • 790ml apple juice, freshly squeezed or store bought
  • 1 lime, zested
  • 1 lime, juiced
  • 2 tbsp mint leaves, finely chopped
  • 1 red apple, thinly sliced
  • 1 green apple, thinly sliced
  • 1 tbsp mint leaves, roughly chopped

Method

  1. Using a KitchenAid blender, combine the apple juice, mint, lime zest and juice into the blender. Blitz until it is frothy and well combined.
  2. Pour the mixture into the 4 ice moulds and place into the freezer overnight or until frozen solid.
  3. When you're ready to serve, attach the ice shaver attachment to a KitchenAid. Remove the frozen blocks from the moulds and pop them into the attachment, lock in place. Place a bowl underneath and turn the mixer onto 10 speed.
  4. Spoon the shaved ice into 4 glasses, garnish with fresh slices of apple and a sprinkle of fresh chopped mint over the top, serve straight away.
