Ingredients
- 500ml pineapple juice
- 300ml coconut cream
- Fresh slices of pineapple to serve
Method
- Using a KitchenAid blender, combine the pineapple juice and coconut cream into the blender. Blitz until it is frothy and well combined.
- Pour the mixture into the 4 ice moulds and place into the freezer until frozen solid
- When you're ready to serve, attach the ice shaver attachment to a KitchenAid. Remove the frozen blocks from the moulds and pop them into the attachment, lock it in place. Place a bowl underneath and turn the mixer onto speed 10
- Spoon the shaved ice into 4 glasses, garnish with fresh wedges of pineapple and serve straight away.
