The ultimate brunchtime staple, sans the waste associated... Or the guilt! Perfectly finished off with a decadent blue cheese sauce, these vege fritters will surely take your brunching to the next level.
2 bananas (peeled, sliced and frozen)
1/4 cup rolled oats
1 tbsp cocoa powder
1 tbsp almond butter
1 cup almond or oat milk
Add all of the smoothie ingredients into a KitchenAid blender, place the lid on and blend until thick and smooth. More nut milk can be added if you prefer a runny smoothie. Pour into 2 glasses.
To make the almond cream, rinse the blender before adding the almond butter and the coconut yogurt. Place the lid on and blend until it is a smooth thick consistency. Depending on how thick the almond butter you are using, a little extra coconut yogurt or nut milk can be added.
To serve pour the almond cream over the top and swirl it through. Sprinkle over the top the cocoa nibs and toasted shaved coconut.
